Wild Salmon Fillet Steaks
These packs contain two boneless and skinless fillet steaks from the esteemed wild American sockeye salmon. This fish has strikingly reddish-orange flesh and a great culinary reputation. It should not be confused with chum salmon or pink salmon. Wild salmon is naturally lean due to its free-swimming life in the ocean and this means you should cook it for less time than farmed salmon. The higher fat content of farmed salmon helps keep it moist. If the sockeye is overcooked it will dry quickly, so undercook it if anything – you can always give it an extra minute or two if you don’t think it’s quite ready. The taste test concluded that sockeye has a more savoury and fuller flavour than farmed Atlantic salmon. As the wild Atlantic salmon has all but disappeared in recent years, we no longer offer it for sale. We're hoping you'll all love sockeye wild salmon.
