Made by Robert Didier who trained under Raymond Blanc before setting up his own restaurant in London. Forced to sell up thanks to a compulsory purchase order (they wanted to put a new railway line right through his plot) he decided to come back North and pursue his passion of baking. Taking a farmhouse recipe from the famous Mrs Kirkham (of Lancashire cheese fame) he developed this fruitcake specifically for cheese to sell on the local farmers markets where he often shared a stand with the Kirkham's and Andy of The Courtyard Dairy.

Richard III Wensleydale. Pasteurised cows’ milk, vegetarian. 310g / 620g.
An ancient Wensleydale recipe that produces a moister, less-crumbly, acidic cheese. At The Courtyard Dairy it is sold in the traditional manner at one month old, Richard III Wensledyale flavour is clean and light with a gentle, milky and lemony flavour.
