The silverside is a mini joint, boned out, and rolled, from the leg. These make wonderful meals for 2 people, simple and easy to cook, yet are so flavoursome and tender.

Several chefs say shh'annu is the best they've ever tasted.
Shh'annu is a technique not a breed, although a unique composite breed has been developed specially for better taste. Hanging, and age of animal, are as important as breed. The lambs are farmed on a regenerative/organic basis, growing slowly and naturally. All animals are grass fed, using minimal drugs, antibiotics, supplements, vaccines, chemicals and fertilizers ie in harmony with nature.
Shh'annu will be supplied frozen.
