Britain’s finest unpasteurised butter. Rich and full flavoured this unpasteurised butter is made fresh on the Crickmore’s family farm. Using their Montbeliarde cows’ milk their cream is gently cultured and beaten to form a traditional handmade unpasteurised butter.
Jonathan and Dulcie Crickmore have been dairy farmers all their lives at Fen Farm Dairy in Suffolk. Falling milk prices prompted them to diversify into cheese making. Seeing a gap in the market for a large (3 kg) unpasteurised Brie (similar to Brie de Meaux) they started to develop Baron Bigod. This involved purchasing a herd of French cows (Montbeliarde) to provide the rich milk needed to complement their newly acquired cheese-making skills. Baron Bigod is one to watch out for as it progresses – the first batches came available only in January 2013.
In 2015 Jonny and Dulcie decided to further diversify their farm and start making butter too, making unpasteurised (raw milk) butter. Using the rich cream from their milk it is gentled acidified (cultured) and beaten traditionally to form these rounds. Being unpasteurised it has a rich flavour and texture.
