Made by famous Ilkley butchers Lishman’s. In recent years this traditional family butchers has diversified using local outdoor reared Yorkshire pork to make some outstanding British charcuterie.
A traditional 6-month air dried Yorkshire cured ham will give even the best Parma Ham a run for it’s money.
Coppa cured from the neck, rubbed in spices and air dried. This cut gives a softer, tender texture bursting with flavour.
A fennel and pork salami is based on Italian recipes and has a richness to offset the delicate herbaceous notes of the fennel seeds.

Son of farmers, David started out as an apprentice butcher in Harrogate before setting up by himself at the tender age of 21 in 1986, creating the now the well-established, famous ‘Lishman butchers’. Now run with the next generation of budding butchers, his daughter Emma.
Based in Ilkley, Yorkshire and only using Yorkshire Pork. This traditional family butchers have expanded in recent years to cure their own Charcuterie and have picked up several prestigious awards over the last few years; including over a dozen stars in total in the Great Taste Awards… as well as the title of Champion Charcuterie Producer 2019.
