Cured from the neck of Yorkshire reared pigs, rubbed in spices and air dried for 6-months. This cut gives a softer, tender texture bursting with flavour.
Made by famous Ilkley butchers Lishman’s. In recent years this traditional family butchers has diversified using local outdoor reared Yorkshire pork to make some outstanding British charcuterie.
Due to it’s softness and depth of flavour, historically Coppa was the most expensive air dried ham.
