A wonderful roasting joint that lends itself to slow cooking. Deep rich flavours and wonderful gravy. The Herdwick Hogget Boned Rolled Shoulder meat is delicious sweet and rich in flavour, when cooked slowly all the connective tissue and marbling melts and creates an eating sensation. The cut is de-boned for ease of carving.
This Herdwick Hogget is dry aged for 7 days to enhance the texture and flavour.
Our Weekly Market Herdwick Hogget is farmed by Jon Watson at Yew Tree Farm, Cumbria. Herdwick Sheep grown slowly on the fells, on a natural diet, are at the perfect size between 1 and 2 years of age. This Hogget is both tender and rich in flavour.
