Spirit of Yorkshire believe in doing things properly and they are obsessed with every step of the growing and distilling process, from field to bottle. They define each part of the whisky creation process themselves. They choose the variety of barley based on quality. They farm it sustainably, leading the way with their progressive farming techniques. They use 100% home grown Yorkshire barley. They distil by hand and nose and they source casks from the very best cooperages around the world.
Mentored by renowned whisky expert Dr. Jim Swan, their instinctive approach is to create a whisky that doesn’t just replicate Scotch. That does not mean they rely on blind luck – they take the best of tradition and apply new thinking to create something unique.
But there’s no ‘one-thing’ that defines the style of their single malt whisky. The team at Filey Bay believes it’s the combination of home grown barley, use of yeast strains, fermentation times, speed of distillation, still configuration and cask policy, along with Hunmanby Grange’s coastal climate that makes the character of their whiskies so unique. That’s why they are so excited by the casks maturing patiently in their blossoming warehouse.
The Name - the local area is hugely important to the distillery and so naturally it’s where they found the name for their Single Malt: Filey Bay. It’s the local beach, visible from the distillery windows; a beautiful stretch of sand that goes on for miles, from the outcrop of Filey Brigg to the headland of Flamborough Head
The Bottle - Their bottle brings together the textures of the farm, the soil, the beach and the sky. Pick it up, look closely and you'll see that there's so much more than initially meets the eye.
